Cottage cheese is the base of this recipe, it gives this cheesecake that distinct cheesy taste without the cream cheese.

Greek yogurt gives a tanginess to this recipe all while providing a creamy texture.

I used honey to sweeten up this recipe, but you can easily use maple syrup, agave, monk fruit sweetener or just leave it out and rely on the bananas for sweetness.

Vanilla extract is necessary for any dessert! I prefer to use vanilla bean paste, but you can use vanilla extract as well.

Add in a vanilla or unflavored protein powder to create a more pudding like texture and for an added boost of protein. I used Ritual protein powder for this recipe.

Use ripe bananas for best results, these will be naturally sweeter.

You can enjoy the banana pudding as is, or add in vanilla wafer, sliced bananas and top with whipped cream.

How To Make

ONE: In a blender or food processor, add in the cottage cheese, greek yogurt, bananas, honey, protein powder and vanilla extract. Blend until smooth and creamy.

TWO: Assemble jars with by layering with vanilla wafers, cheesecake filling, sliced bananas and then finishing off with whipped cream if desired.

Tips And Tricks

Slice bananas into small pieces before adding into the blender or food processor. This will allow them to blend quickly and easily without over-blending the mixture.

Over blending will create a more liquid consistency. If your mixture is too runny, you can add in more protein powder to thicken it up, or store in the fridge for a few hours.

The pudding tastes amazing on it’s own or layered with vanilla wafers for a more traditional banana pudding.

Be sure to use a protein powder that you enjoy otherwise you can ruin the taste of this pudding. I prefer to use Ritual protein powder.

All protein powders aren’t created equal, meaning you may need to add more or less into the mixture depending on the consistency. Start with one scoop and add in another if needed. Don’t add more than 2 scoops to avoid a strong protein powder flavor.

How To Serve And Store

Serve this High Protein Banana Pudding chilled and with vanilla wafers, fresh banana slices and whipped cream. Garnish with a mint spring if serving for guests.

Store leftovers in an airtight container in the fridge and enjoy up to 3-4 days for best results. If you want the vanilla wafers to stay crisp and crunchy, then it’s recommended to store the pudding separate and assemble when you’re ready to enjoy.
