Healthy breakfast or dessert

I make this mango whipped cottage cheese and enjoy it for a light breakfast with fresh fruit, or as a snack or light dessert. It satisfies that "I want something sweet" craving while still keeping things healthy. The combination of mango and cottage cheese is absolutely delicious, especially if you can find fresh, sweet, juicy mangoes that are in season.

What is whipped cottage cheese?

Whipped cottage cheese is a light and fluffy, smooth and creamy, custardy version of cottage cheese, without the chunky curds. It still has all the benefits of cottage cheese - it's a healthy, high-protein, low-fat food full of live and active cultures that are so good for your gut.

But I know a lot of people can't stand eating cottage cheese because of the texture - they don't like the feel of the curds in their mouth. So I always recommend whipped cottage in this case.

You can actually buy already made whipped cottage cheese - Friendship dairies has a pretty good one. But the problem is that it is almost never available in stores near me. So I've taken to making my own whipped cottage cheese. The good thing about that is that I get to add flavor to homemade whipped cottage cheese. Just like in this recipe, I often add fresh fruit to the cottage cheese as I am whipping it, or even cocoa powder or peanut butter.

And if you think eating smooth cottage cheese is kind of weird, then add a little milk and make a cottage cheese smoothie to sip on!

What kind of cottage cheese to use to make whipped cottage cheese:

You can use any kind of cottage cheese you like!

Small curd or large curd? It doesn't matter whether it's small curd or large curd, because it will all get blended into a smooth creamy dreamy custardy texture.

No sodium or salt-added?I prefer to use no-sodium added cottage cheese because I don't like the flavor of fruit and salty cottage cheese. My husband prefers the salted cottage cheese because helikes the sweet and salty combo.

Fat-free or low fat? Any fat content works for this recipe - non-fat, 1%, 2%, or even 4% cottage cheese works well. It just depends on what your diet goals are. I prefer to use non-fat cottage cheese so I can eat a larger portion for the same amount of calories.

Two tips to make whipped cottage cheese:

  1. Do NOT use a high powdered industrial strength blender such as the Blendtec or the Vitamix. It will turn your cottage cheese into a runny liquid instead of whipping it up into a smooth custard-like texture. A food processor (such as this small one) is best for this recipe.
  2. I usually buy cottage cheese, whip up the whole thing in a food processor, and put it right back into the container it came in - no need to get another container dirty!

How to serve whipped cottage cheese:

This mango-flavored whipped cottage cheese is best served with fresh fruit, such as diced mango, sliced banana, fresh strawberries or pineapple chunks. Other tasty toppings are toasted coconut flakes (these caramel sea salt ones from dang are so dang tasty!), chia seeds, flax seed, or hemp hearts. A drizzle of honey or agave syrup on top is also wonderful, especially if you choose not to sweeten the whipped cottage cheese itself.

Is this recipe keto?

Not exactly. I recommend using low fat cottage cheese, which is not exactly aligned with the keto diet, and mango contains lots of natural sugars. But here's how you can make it keto....

How to make this recipe keto:

You can easily make this a high protein, high-fat, low carb recipe that is keto friendly by doing the following: 1) Use a full-fat cottage cheese. 2) Skip the mango, and instead stir in a few low-sugar berries, some unsweetened almond butter or peanut butter, or some cocoa powder.
