Cottage Cheese Toast is a quick and simple breakfast or lunch option with so many different ways you can top it. Savoury or sweet, there is a cottage cheese on toast topping for everyone. Ready in just a few minutes, this is a protein packed meal or snack option and one of our favourite ways to use cottage cheese.

We are very much enjoying cottage cheese at the moment. An easy way to add extra protein to our diet, and it is so versatile.

This cottage cheese toast recipe is our go-to when we need something quick. Here we are sharing our 6 favourite topping ideas, with lots of different variations too.

Cottage cheese on toast with eggs, avocado, salmon, berries, peaches and a cucumber, tomato and olive mix. There is a real mix here, and so easy to adapt to suit what you have and what you like.

We love starting the day with a slice or two of this cottage cheese breakfast. Protein packed, a good source of fibre and lots of extra ways to add nutrients with the toppings. There are 8g of protein in just half a cup of cottage cheese, so if you aren't including it in your meals already, then you really should.

  • Toast - This is the base of the toast with cottage cheese. We used sourdough, as it's the best. But, feel free to use your favourite bread. Have your tried making our Air Fryer Toast yet?
  • Cottage cheese - We used fat free just to make it a bit lighter. But you could use full fat which would make it creamier.
  • Toppings - This is where you can get really creative. Savoury or sweet, we have so many topping options for your below.

One: Toast the bread to your preferred doneness.

Savoury Cottage Cheese Recipes

Egg - This makes this cottage cheese breakfast recipe even more protein packed. Add an Air Fryer Boiled Egg on top with our Everything Bagel Seasoning. You could add some crispy kale or sautéed spinach to this too. Also, a drizzle of chilli on top is SO good.

Avocado - Cottage cheese avocado toast is the way forward! It's avocado toast, with a protein boost and maybe one of the easiest options here. You can mash the avocado, or just slice it on top. Of course our Everything Bagel Seasoning needs to go on top.

Salmon - For those lazy Sunday mornings when you want something a little more special. Slices of smoked salmon with our homemade Pickled Red Onions and some capers has SO much flavour. Add some dill on to this too. You could add flakes of cooked salmon fillet instead.

Cucumber, tomato and olive - This just screams Mediterranean flavour! This is more of a lunch option, but it is SO good. Really light and fresh. You could add some sun-dried tomatoes too for extra tomato flavour and add some red chilli flakes for a kick of heat. Instead of chopped olives you could use a tapenade.

For a savoury cottage cheese topping, we also like hummus which makes it super creamy. You could also keep it simple with some slices of cucumber and chopped fresh mint.

Sweet Cottage Cheese Toppings

Berries - Just look how colourful this is! Any berries will work here. We used raspberries, blueberries and strawberries, but you could use cherries, blackberries or cranberries. Or, just do strawberries and add some fresh basil and balsamic glaze.

Why not add some almond or cashew butter to the top before the cottage cheese and berries for an extra layer of flavour?

Peaches - The combination of peaches and honey is just the best. Add that to the cottage cheese for breakfast and you have yourself the best sweet way to start the day. The combination of creamy and sweet just works so well.

Other sweet options that work well are banana, peanut butter and cinnamon, mango and coconut mix or cooked apples and cinnamon.

Serving Suggestions

This really is a meal all by itself. If you are serving it for breakfast then a coffee on the side is a must. Why not try our Iced Coffee or Cinnamon Coffee?

Extra Tips

  • You don't just have to use bread for the toast. You could toast a bagel, English muffin or crumpet to put the cottage cheese on.
  • If you don't love the texture of cottage cheese, then you can blend it until smooth. This makes it more of the texture of cream cheese, and our kids love it this way.
  • If you are using frozen berries rather than fresh, make sure they have thawed a little before using them, as they will add too much moisture and make everything soggy.
  • Assemble everything just before you are ready to use it so that the toast stays crispy.

Do I need to butter the toast first?

Personally, we don't butter our toast first as it saves some calories. However, feel free to soften up the toast with some butter first. You could add olive oil too.

Is there a vegan option?

Why not try making this Vegan Cottage Cheese and then add your favourite vegan toppings. You could also use hummus as a vegan alternative.

How to store

These are best eaten straight away, so only assemble them right before you are ready to eat them. You can chop up some of the toppings in advance and store them though. The berries can be chopped, you could make the pickled red onions and make the cucumber, tomato and olive mix.

  • 40 g (0.25 cups) Cottage cheese - fat free

Avocado

  • 0.5 Avocado - sliced
  • 0.5 teaspoon Everything Seasoning

Eggs

  • 1 Egg - boiled
