What is whipped cottage cheese?

Whipped cottage cheese is exactly what it sounds like - a light, fluffy, smooth version of cottage cheese. It still has all the nutritional benefits of cottage cheese - healthy probiotics, high protein content, calcium, but without the curds that so many people don't like.

Personally, I don't mind curds in my cottage cheese. But this smooth and creamy whipped cottage cheese is about a million times better. I am not exaggerating.

I know quite a few people who can't stand the cottage cheese curds and miss out on such a healthy, light, nutritious snack because of their curd-hate. If you are the kind of person who dislikes certain foods because of texture, then youmust try whipped cottage cheese.

How to make whipped cottage cheese:

Making smooth and creamy curd-free whipped cottage cheese is super easy: Just buy any cottage cheese, put it in a food processor (not a blender! see my note below), and process for a few seconds until smooth and creamy. And I really do meanany cottage cheese - depending on your diet preferences. Fat-free, low fat, regular fat, no-salt, salt-added. They all work. It doesn't matter what size curds the cottage cheese has because they will all get blended into a smooth texture. You can also get the pineapple cottage cheese that Breakstone, Axelrod, and Friendship Dairies makes - that would make a delicious flavored whipped cottage cheese. (Side note: why did all the companies decide to make pineapple cottage cheese, but not other fruit?? It's time they make some other flavors, don't you think?)

I prefer the no-salt cottage cheese to make whipped cottage cheese. Aldo prefers the salted cottage cheese because he loves the sweet and salty combo of the cottage cheese + sweet toppings.

A few tips for making whipped cottage cheese:

  1. Use a food processor instead of a high powered blender to make whipped cottage cheese. Trust me. A powerful blender such as the Blendtec or Vitamix is amazing, but not for this. My Blendtec literally liquefied my cottage cheese in about 2 seconds. So don't make the same mistake I did. Use a food processor to make whipped cottage cheese. I have this small Cuisinart food processor that is perfect for making a few servings of cottage cheese.
  2. As soon as you unload your groceries, transfer all the cottage cheese from the container to the food processor, whip up the cottage cheese, and then transfer the whipped cottage cheese back into its container. This way it's ready to eat whenever you feel a snack attach coming on. Just top it with your favorite toppings and you're ready to go!

Diet-friendly tips for this recipe:

This recipe is highly customizable depending on your diet and food goals. Here are a few variations to make this recipe low-cal, gluten free, and keto-friendly:

  • Low cal: use fat-free cottage cheese, and cut down on the almond butter/peanut butter.
  • Gluten-free: just skip the puffed wheat and add gluten-free granola instead.
  • Keto-friendly: use high-fat cottage cheese and skip the banana and sweeteners. Make sure you use natural almond butter so it doesn't have any sugar added to it.

So you see, you won't run out of variations anytime soon. I really hope you try making whipped cottage cheese - I think you'll love it!
